As I’ve said many times, I like simple food. I love being able to take a few ingredients and whip up something delicious. I mean, really detailed recipes with all sorts of ingredients can be really delicious as well. But I love being able to open my refrigerator and/or pantry on any given day and have everything I need to make something delicious, even when we I don’t have much on hand. And nothing fits the bill quite like this Egg and Olive Salad.

Egg and Olive Salad is so simple to make and tastes delicious! This recipe uses a few basic ingredients that we all tend to have on hand and is a great way to use up leftover Easter eggs!

Since I have such a hot, passionate love affair with eggs, it’s pretty much a given that on any given day you can open my fridge and find hard boiled eggs. I generally just eat these on their own as part of my breakfast, but I also love making a simple egg salad with them to eat as sandwiches.

And sometimes, if I really want to kick it up a notch, I’ll add olives into the mix to make Egg and Olive Salad. The delicious, brininess of the olives elevates a the glorious egg salad, taking your whole sandwich to new heights (can you tell I love olives just as much as eggs?).

This is so quick to make and is an excellent option for tea sandwiches at a ladies luncheon as well as a great way to use up all of those leftover Easter eggs. Either way, hop on into the kitchen and throw this salad together- you’ll be happy you did!
