My all-time favorite Tex-Mex migas recipe!Â It’sÂ super-simpleÂ to make with leftover chips and salsa, and always a crowd fave.
Alright, friends.Â We need to revisit the topic of migas.Â Â â™¡
I first postedÂ here on the blog about migasÂ five years agoÂ after visiting Austin for the first time, when I was introduced to their brilliant, iconic Tex-Mex scramble.Â Then proceeded to fall evenÂ more in love with themÂ two years later, when my friend, Kathryne, and I spent a month snowbirding and eating all the tacos in Austin.Â AndÂ ever since, they have become one ofÂ my go-to brunch recipes that we make around here constantly — especially when serving a crowd.
I’ve been meaning to pop back in here and update this recipe for years becauseÂ I recently cut out a major step in the recipe — which has been a total game-changer, at least for me.Â Authentic migas are supposed to be made with leftover corn tortillas, which are then cut into small strips, fried in oil until crispy, and then added to an egg scramble with tomatoes and seasonings.Â Which is all well and good.Â But I admittedly hate frying things,Â plusÂ that stepÂ takes awhile.Â So instead, IÂ switched awhile backÂ toÂ just using leftover corn tortilla chips and salsa instead — which I alwaysÂ always have on hand — and it has turned this dish into just about the easiest migas recipe ever.Â And we can’t get enough of it.
So if you also happen to have some leftover chips and salsa in the house, grab some eggs and let’s make migas!
The best thing about migas is that you probably already have these ingredients on hand!Â You’ll just need:
- Eggs:Â Which we will soft scramble.Â (I like to add a bit of milk to my eggs to make them extra creamy.)
- Onion, JalapeÃ±o and Garlic:Â I like adding these in to give the eggs some extra flavor and texture.Â But you can skip this step if you’re in a hurry and just add a bit of extra salsa instead.
- Corn Tortilla Chips:Â Traditional migas call for frying up leftover corn tortillas, which you’re welcome to do.Â But more often, I just crumble up leftover tortilla chips, which is much speedier.Â Plus I always (like,Â always)Â have them on hand.
- Salsa:Â Any red or green salsa that you have on hand will do!
- Cheese:Â I like to use shredded cheese forÂ the egg scramble, but you could also add some crumbled queso fresco or cotija if you prefer.
- LOTS of Toppings!Â Â A must, in my book.Â :)Â Chopped fresh cilantro, diced red onion, sliced avocado, diced tomato, extra salsa — whatever sounds good!
How To Make Migas:
As I said, these Tex-Mex migas are ridiculously easy to make.Â Simply:
- SautÃ© the onion, jalapeÃ±o and garlic:Â In a large sautÃ© pan, cook until they are nice and soft.
- Add eggs:Â And slow scramble until they areÂ cooked to your desired consistency.
- Add cheese, tortilla chips and salsa:Â Stir until combined, then cook for 1 or 2 minutes to warm through.
- Serve and garnish:Â Serve warm, and garnish with lots and lots of your favorite toppings!
How To Serve Migas:
There are all sorts of ways you can serve up migas, including:
- Plain:Â My favorite — just served up as below in a big bowl, with lots and lots of toppings.
- Breakfast tacos:Â Serve your migasÂ inÂ corn tortillas to haveÂ migasÂ tacos.
- Breakfast burrito:Â Wrap your migas up in a big flour tortilla for an easyÂ migasÂ burrito.
Potential sides could also include:
- Beans:Â Black or pinto beans are a traditional side in Texas, either served refried or soupy.
- Fresh fruit or smoothie:Â The sweetness is a nice balance to the savory.
- Iced coffee:Â My favorite side to go with migas in the morning. ;)
Tex-Mex styled migas are the ultimate breakfast comfort foodâ€¦with a kick!
- 12 large eggs
- 1/4 cup milk
- 1/2 teaspoonÂ each: ground cumin, fine sea salt, freshly-cracked black pepper
- 1 tablespoon olive oil
- 1 small white onion, peeled andÂ diced
- 1 jalapeÃ±o, seeded andÂ finely chopped
- 3 cloves garlic, minced
- 2 large handfuls corn tortilla chips, roughly crumbled
- 2/3 cup salsa,Â homemadeÂ or store-bought
- 2/3Â cup shreddedÂ Mexican-blend cheese, plus extra for serving
- toppings: chopped fresh cilantro, diced red onion, sliced avocado, diced tomato, extra salsa
- In a large bowl, whisk together eggs, milk, cumin, salt and pepper.Â Set aside.
- Heat oil over medium-high heat in a large sautÃ© pan.Â Add onion and jalapeÃ±o and sautÃ© for 5 minutes, stirring occasionally, until the onion is soft and translucent.Â Add garlic and sautÃ© for 1-2 additional minutes, stirring occasionally, until the garlic is fragrant.
- Add the egg mixture, and reduce heat to medium.Â Cook for 5-6 minutes, stirring frequently, until the eggs are completely scrambled.Â Stir in the tortilla chips, salsa and cheese.Â Cook for 2 minutes, stirring occasionally.Â Taste and season with extra salt and pepper if needed.
- Serve warm, garnished with your desired toppings.Â (I say the more, the merrier!)
