Good Gravy!
I must admit, growing up I was never a fan of gravy.
But once I learned how to make vegan gravy with mushrooms, I changed my tune.
Now this savory sauce is one of my family’s favorite vegan Thanksgiving recipes, so I make it every year.
It’s fantastic with Instant Pot Mashed Potatoes, Lentil Meatloaf Muffins, and Roasted Cauliflower Steaks.

Why mushrooms?
Besides being delicious, mushrooms are incredibly nutritious.
I started incorporating them more frequently into my regular diet when I learned about Dr Fuhrman’s “G-BOMBS”.

And they are a natural source of vitamin D, which I learned from the article 5 Easy Ways to Get More Vitamin D.
Plus this vegan mushroom gravy is wonderful on holiday loaves and vegetables.
And mushrooms are a fantastic ingredient to incorporate into a plant-based Mediterranean diet.

What is vegan gravy made of?
I’ve seen lots of different recipes for vegan gravy, including some that contain vegan butter, soy sauce, and all-purpose flour.
But you only need a few basic ingredients to make this easy vegan mushroom gravy:
- Mushrooms: I like using cremini mushrooms, but you can use white button mushrooms if you prefer.
- Fresh garlic
- Dried Thyme
- Salt and pepper
- Tapioca flour: Or alternatively you can use cornstarch or arrowroot powder.
- Water
Since mushrooms have a high water content, you don’t need oil when sauteing them.
However, feel free to use a little olive oil if you prefer.

How to make Easy Vegan Mushroom Gravy
When I say this recipe is easy, it really is!
- First saute the mushrooms with garlic and seasonings.
- Then stir in a slur made from tapioca flour and water.
- Let the gravy thicken, and it’s ready!
This is not a classic gravy where you make a roux.
Rather it’s a short-cut gravy you can make very quickly.
And you can even make it ahead of time and reheat it the next day.
This is such a time saver when it comes to cooking for the holidays.
Moreover, if you really want to plan ahead, you can freeze the gravy.
Simply let the gravy cool to room temperature, place it in a glass container leaving a little space at the top, then add the lid and place it in the freezer.
Don’t forget to let the frozen gravy thaw in the refrigerator before reheating it in a saucepan.

Easy Vegan Mushroom Gravy (Gluten-Free & Oil-Free)
Equipment
- Gravy & Sauce Boat Warmer with Detachable Cord
Ingredients
- 8 ounces cremini mushrooms, (or white button mushrooms) sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- salt, to taste
- pepper, to taste
- 2 Tablespoons tapioca flour, (or 1 Tablespoon cornstarch or arrowroot powder)
- 1 cup water
Instructions
- In a small pot, saute the mushrooms for several minutes, stirring frequently, until they are reduced in volume and all the excess water is evaporated. If your mushrooms stick, add a splash of water to the pan.
- Meanwhile, add the tapioca flour to the cup of water and stir well. Set aside.
- Add the garlic to the mushrooms and saute for 30 seconds.
- Add the thyme and salt and pepper, to taste.
- Give the tapioca flour/water mixture a stir and slowly add it to the mushrooms. Stir until the gravy has thickened. If you prefer a thinner gravy, add a little more water and stir.
